It’s Summer, right?!

Well apparently so and what better time to get out your Mediterranean Cheese Making Kit! We love to see what our customers and friends create with their home made cheese and would like to thank ‘Beetroot and Buttermilk’ for creating this delicious summer salad using halloumi made with our Mediterranean cheese making kit.

Fresh pomegranate & lime couscous topped with
homemade grilled halloumi & mint
Ingredients
1/2 Cup of couscous
3/4 Cup of water
Lime juice to taste
Drizzle of olive oil
1/4 Cup chopped cucumber
1/4 Cup pomegranate seeds
1 Chopped tomato
Couple mint leaves finely chopped
2 Slices of halloumi
Sea salt & pepper
Mixed herbs

Method
Make your halloumi with the instructions supplied in the kit, alternatively use shop bought but I definitely recommend giving this kit go!

In a pan cook your couscous using the instructions on the packet. I boiled the water, added the couscous and then turned the heat right down for 5 minutes with the lid on until all water was absorbed. Fluff up the couscous with a fork so it doesn’t stick together. Drizzle with olive oil and lime juice and let the couscous cool.

Brush the halloumi with a little oil, sea salt and some mixed herbs, and place on a tray. Heat under the grill for a couple minutes until browned. Keep an eye on the cheese as it browns very quickly! (Alternatively if you would prefer fry in a little oil in a frying pan until golden.)

Add the cucumber, pomegranate seeds and tomato to the couscous and season with salt and pepper. Top with the halloumi and the chopped mint and serve.
